Day One


Arrive at our gorgeous accommodation in the picturesque Barossa Valley Wine Region, a place known for rejuvenation and just an hour’s drive from Adelaide. This evening is all about setting the scene for a brilliant two days ahead, soaking up our beautiful surrounds and enjoying a relaxed conversation over mouth-watering canapes and drinks (including a complimentary low carb cocktail).

Tomorrow, the real work begins!

Today we’ll hear a doctor answer the questions “how did we get here?” and “what medical preparations and monitoring are recommended?” We’ll also set the record straight on macronutrients and how to calculate your macro needs. Switching focus, we’ll be digging into behaviour change, goal setting and your “why”, giving you the breakthroughs you need for sustainable change. Two curated mind-body sessions are also on the agenda. In the evening, we’re coming together for a delicious dietitian-approved meal where we’ll also hear from our community on their experiences.

We ease into our final day by understanding practical ways to live the low carb lifestyle and how to troubleshoot, followed by insights from our doctor on what diseases can benefit from a low carb diet. To set you off home with a deeper understanding of how to stay on track, you’ll get some useful tools for establishing your new lifestyle routine. We'll take a break from all the learning and sharing to go deeper into ourselves with some expansive guided mind-body sessions. After a delicious afternoon tea, it’s time to wrap up our time together, with a final opportunity to ask questions of our expert team and seek any additional support you need.

Meet Your Hosts

Running this retreat is our doctor, dietitian and lifestyle coach. Their collective mission is to demystify low carb nutrition and support people to reclaim their wellness, lose weight and manage chronic health conditions with lifestyle medicine.

Dr. Laureen Lawlor-Smith has been a doctor for 40+ years. After discovering low carb nutrition medicine, she knew that this was the way she wanted to practice medicine – to help people change their lives and improve their health through lifestyle medicine, using the latest scientifically-backed strategies. 

In a world where information (both good and dubious) is just a Google search away, Laureen provides clinically driven nutrition insights you can trust to be balanced, credible, and reliable. And she wraps it all up with a genuine desire to keep you in the driver’s seat of your own health. 

Nicole has been an Accredited Practising Dietitian for over 20 years. As a low carb specialist, she also coaches, trains and mentors dietitians nationally and is in demand as a speaker on the benefits of low carb nutrition and how to practically implement this lifestyle. 


With a contagious enthusiasm for good food and the science of nutrition, Nicole brings a fresh approach you won’t find anywhere else. She focuses on targeted low carb nutrition strategies designed to suit your medical history and fit into your lifestyle.

Jody is a Neuroleadership Institute Brain-Based Trained Coach who has dedicated 15+ years coaching and consulting within the health industry. 

As an expert facilitator of mindset and behaviour change, Jody empowers people to embrace sustainable, healthy lifestyles to prevent and treat disease and foster well-being and thriving. Using evidence-based questioning, conversational and goal setting skills, you’ll feel supported to make sustainable, healthy behaviour change, consistent with your personal strengths and goals.
